Description
In the enzymatic debitterization, naringinase is more studied, which can act on the flavanone glycoside compound naringin to debitter fruit juice. Naringinase mainly contains two enzymes, one is rhamnosidase, which can decompose bitter naringin (naringin-7-rutinoside) into rhamnose and non-bitter naringin-7-glucose, Naringinase is an inducible enzyme. The other is β-glucosidase, which can hydrolyze pomeloside-7-glucose into pomeloside and glucose.
Therapeutic uses
Naringinase is used in orange and grapefruit processing to improve pulp washing, improve recovery of essential oils, and remove bitterness and clarify juices.
Naringinase can be used for the deglycosylation of glycopeptide antibiotics, flavonoids or glycolipids.
